Method

Preparation
  1. Sift the powdered sugar and almond flour together into a bowl and set aside.
  2. In a separate bowl, whisk the egg whites until soft peaks form; gradually add the granulated sugar until stiff peaks form.
  3. Fold in the sifted almond flour and powdered sugar until the mixture flows off the spatula like thick lava.
  4. Pipe heart shapes onto a baking sheet lined with parchment paper and let them sit for 30 minutes to 1 hour.
Baking
  1. Preheat the oven to 300°F (150°C) and bake the macarons for 18 to 20 minutes.
Making the Buttercream
  1. Beat the softened butter until creamy and gradually add the powdered sugar.
  2. Stir in vanilla extract and heavy cream until smooth.
Assembly
  1. Assemble the macarons by piping the buttercream onto one shell and sandwiching with another.
  2. Refrigerate the assembled macarons for at least 24 hours before serving.

Notes

Ensure egg whites are at room temperature for better whipping. Don't skip the resting time before baking to help form the shells' characteristic feet. Be gentle when folding the dry ingredients into the meringue to keep the batter airy. Use a piping bag for neat and consistent shapes. Experiment with different food coloring.
