Ingredients

For the Salmon
  • 1.5 lb salmon fillets (skin-on if possible)
  • 0.75 tsp kosher salt (divide between marinade and fish)
  • 0.5 tsp black pepper (freshly ground)
  • 0.5 tsp smoked paprika (or sweet paprika)
  • 0.5 tsp lemon zest (optional)
  • 1 tbsp chopped fresh parsley (for garnish)
For the Marinade
  • 2.5 tbsp Dijon mustard
  • 2 tbsp honey
  • 1.5 tbsp lemon juice (fresh)
  • 1 tbsp olive oil
  • 2 tsp minced garlic

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the Dijon mustard, honey, lemon juice, olive oil, garlic, and 0.5 tsp of kosher salt.
  3. Place the salmon fillets on a baking sheet lined with parchment paper.
  4. Season with the remaining salt, black pepper, smoked paprika, and lemon zest (if using).
  5. Brush the honey mustard mixture generously over the salmon fillets.
Cooking
  1. Bake in the oven for about 15-20 minutes, or until the salmon flakes easily with a fork.
  2. Remove from the oven and garnish with chopped fresh parsley before serving.

Notes

This salmon pairs well with steamed vegetables, rice, or a fresh salad. Drizzle a little more honey mustard sauce over the top for extra flavor. Make sure not to overcook the salmon; it should be flaky and just cooked through. Use fresh lemon juice for the best flavor. For some heat, try adding a sprinkle of crushed red pepper.
